The Sericaia is a typical sweet from Alentejo and is usually served in a terracotta plate. Vanda tried out a recipe for us and we are very happy to share it with you.

Recipe for 6
130 g of sugar
50 g of flour
4 eggs yolks
4 eggs whites
35 ml milk
1 cinnamon stick
1 lemon rinds
Turn the oven to 200 C.
Grease a bottom plate (of clay) with butter.
Join the milk, lemon peel and cinnamon stick together in a pot and boil for 5 minutes. Let it cool down.
Mix the yolks with the sugar and the flour in a big bowl. Slowly ad the cold, precooked milk.
Beat the egg whites with a pinch of salt and ad them to he previous preparation.
Place spoonfuls of the dough on the plate and sprinkle with plenty of cinnamon.
Bake in the oven for about 15 minutes (check the cooking with a toothpick). Remove from the oven, let it cool down and keep it in the refrigerator until serving.
