Our talented friend and photographer Vanda just did her magic in the kitchen again! This time we're sharing a refreshing summer recipe: Portuguese Gazpacho.

Ingredients
for approximately 4 people
1 cucumber
300 g ripe tomatoes
150 green pepper
2 head of garlic
1/2 onion
rustic bread (preferably from a day or two ago)
parsley (fresh)
coriander (fresh)
oregano
2 soup spoons of virgin olive oil
2 soup spoons of Vinegar
½ coup spoon of salt flakes
a bit of chouriço
1 l cold water
ice
Preparation
Chop the onion and garlic.
Cut the top of the pepper, remove the seeds and cut the peppers into cubes.
Peel the cucumber and cut it into cubes.
Cut the tomatoes into cubes.
Chop the parsley, oregano and coriander.
Cut the chouriço into cubes.
Add the onion, garlic, pepper, tomato and cucumber in a large bowl. Season with salt, olive oil and vinegar. Add the parsley, coriander and oregano. Stir well and add cold water until the ingredients are covered. Ice can be added at this point to refresh more quickly or just before serving. Serve with bread in the bottom of the dish and pour the gazpacho over. Bom apetite!
