While visiting my parents, I tried out new Portuguese recipes with my mum (best Portuguese baker in the world) and my dad (best Portuguese cook in the world). And we absolutely adore Marco Costa's recipe 'Torta de Laranja' (orange roulade). It's easy to bake and the perfect sweet gift to bring to a Christmas Dinner (we're very early with Christmas baking suggestions this year)!
Ingredients (for 10–12 slices)
12 eggs 500 g sugar 50 g flour 15 g baking powder
2 big oranges (or 3 small ones)
butter for greasing the cake pan (square one, about 36 x 25 cm)
Preheat the oven to 200 degrees
Mix well the flour, sugar and baking powder with your hands in a bowl
Grate both orange skins and add together with orange juice (of both oranges), whisk well
Add the eggs (two by two) and whisk well
Grease the cake pan with butter
Tray the cake pan with baking paper and grease also with butter
Fill the cake pan with the cake dough
Fill an oven baking pan with a bit of water (about 2 cm)
Put the cake pan with the cake dough into the baking pan filled with water. In Portugal we call that 'Banho Maria'
Bake for 20 to 30 min (depending on how strong your oven is). Make sure it gets a light orange color. If it gets too brown on top, cover it with a baking paper.
Take the cake out and roll to a roulade with the baking paper. Let it cool down and afterwords put it in the fridge. It's best served cold.
