White Bean Dip – The Portuguese love "Feijão"


First of all, welcome to Taste of Portugal. dear Ana Novais! We're so excited to have a wonderful Portuguese cook and stylist on board. From now on, Ana will be presenting monthly a recipe of hers on our blog. The recipes will always be connected to our home country Portugal. You'll find traditional ones and some fusion cuisine as Ana used to study in Milan and Rome.

Ana lives in Oporto, Portugal. She's always been passionate about food. She loves to cook for herself and specially for others. A few years ago, she started her own company called 'Petiscos e Miminhos'. 'Petiscos e Miminhos' offers a personalized catering service for parties, coffee-breaks, openings and other events. It also provides an order service, from finger food and savory dishes to desserts and birthday cakes.

Her first recipe is a very easy and light one, even if "fejão" (beans) is involved. The white bean dip is perfect for a summer barbecue – we love it!




Ingredients

2 cloves of garlic

50 g grated parmesan cheese

handful fresh parsley

1 can white beans, rinsed and drained

zest and juice of half a lemon

pinch of salt

Preparation

  1. Blend all the ingredients until it reaches a soft and creamy consistency

  2. Keep in the fridge until serving

  3. Serve with toast and bread
