Honey Cake by Avó Lidia



Oh how I loved that heavenly smell coming out of my grandmother Lidia's oven – like roasted honey (if that even exists). Some people don't like to share secret family recipes. But I'm sure my grandmother would have loved it and would have been very proud. And it is very, very easy to bake:

Honey Cake by Avó Lidia

1 cup honey (I usually take a normal sized tea cup)

6 eggs

1 cup olive oil (same cup as for the honey)

250 g brown sugar

250 g flour

1 tea spoon baking powder

2–3 tea spoons of cinnamon

Preparation

  1. Preheat the oven to 180 degrees, air circulation

  2. Blend the honey, olive oil, baking powder, egg yolk, sugar and cinnamon together

  3. Add the flour

  4. Whisk the egg white and add to the blend

  5. Bake in the oven for about 30 – 45 min
