
For 12 Pasteis de Nata
500 ml milk
200 g sugar
1/2 vanilla bean
6 egg yolk
1 spoon (soup) cornstarch
puff paste (I usually buy it. Still working on the right recipe.)
cinnamon
icing sugar
Preheat oven to 200 C (recirculation air)
Mix together the milk, sugar and cornstarch (while cold, so there wont be any cornstarch lump)
Cut the 1/2 vanilla bean open (long way). Scratch out the seeds and add them (incl. the vanilla bean) to the milk, sugar and cornstarch
Cook stirring constantly (light heat) until it gets a creamy texture
Turn of the stove, take out the vanilla bean and put the cream aside
Cream the egg yolks and add them stirring constantly
With a bit of butter, grease the inside of a cupcake tin.
Cut out 12 puff paste circles. I usually take a big drinking glass to form the circles into the puff paste. Mold them into the cupcake tin
Allow pasteis de nata to bake for approx. 15 minutes
They are best warm sprinkled with cinnamon (icing sugar is an option). Bom apetite!
